Sausage Tortellini Soup

Ingredients

  • 3 links of Gunzey’s Hot Sausage with casing removed
  • 2 tbsp extra virgin olive oil
  • 1 tsp minced garlic
  • 1 onion diced
  • 1 46 oz can of chicken stock
  • 1 large can of crushed tomatoes
  • 1 large can of tomato sauce
  • 1/2 cup of apple cider
  • 1 large carrot diced
  • 2 medium zucchini grated
  • 2 stalks of celery diced
  • 2 tsp of italian seasoning
  • 1 bag of frozen cheese tortellini

Directions

Season to taste I added 1 tbsp of chicken base and a little extra apple cider. The cider really makes this recipe don’t let it out. Add oil to your soup pot. Remove sausage from the casing add to the pot break it up into little pieces. Add your diced onion, garlic, carrot, celery, and zucchini. When veggies start to soften up add the chicken stock, tomato sauce, crushed tomatoes, and apple cider. Add your dry Italian seasoning. Cook until the veggies are soft or until it starts to boil. This is where I taste to see if it needs anything other seasonings. I always have chicken base on hand. When the soup is boiling add your tortellini cook until the tortellini are cooked through. The cooking time will vary depending on what kind of tortellini you are using (frozen, dry, or fresh) check package for cooking times. I served with a crusty baguette.
